Banana Bars
Heat Oven to 350 degrees. Grease & lightly dust with flour a (10″ x 15″ cookie sheet. (I use Wondra Flour)
1 C sugar
2 eggs
1 C mashed bananas (about 3)
1/4 C shortening or margarine
1/4 C oil
1/4 C milk
1 tsp. vanilla or banana extract
Mix sugar, bananas, milk shortening/margarine, oil, vanilla or banana extract and eggs in large bowl.
Add:
2 Cups flour
2 tsp baking powder
1/2 tsp. salt
1 C chopped nuts – Optional
Stir in flour, baking powder and salt. Stir in nuts. (optional)
Spread in greased and lightly floured pan.
Bake 15-20 min. until golden brown. Frost warm bars with icing (As soon as they are removed from the oven).
Icing
2 C powdered sugar
2 T softened margarine
1/2 t. vanilla or banana extract
1/4 t. salt
2 T. milk
Mix all ingredients until spreading consistency. Frost warm bars. Cool. Cut in squares. Enjoy!!!
Rice Krispies Treats~
Optional~ One cup chopped salted peanuts. One 12 ounce bag cooking chips. Add to Rice Krispies. I have tried the white morsels and also the peanut butter morsels. What a taste treat!!!!!
3 Tbsp margarine or butter
1 package (10 oz. or about 40) regular marshmallows or 4 cups miniature marshmallows
6 Cups Rice Krispies cereal
Melt margarine or butter in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispies cereal and cooking chips, nuts if desired and stir until well coated and chips are melted. Using a buttered spatula or waxed paper, press mixture evenly into a 13 x 9 x 2 inch pan coated with cooking spray. Cut into 2 inch squares when cool. Makes 24 ~2 inch squares when using the above noted pan. Store in airtight container.
Note:
For best results, use fresh marshmallows.
1 jar (7 oz) marshmallow creme can be substituted for marshmallows.
Diet, reduced calorie or tub margarine is not recommended.
Store no more than two days in airtight container.
Southern Fried Chicken Tenders
Skinless, boneless chicken breasts cut in about 2 inch strips
Self rising flour (make sure to use Self rising flour)
Oil for frying
Using a skillet~ add about one inch of oil in the skillet ~Heat oil to about 350 to 375 degrees. Dip the chicken pieces in beaten egg and then in self-rising flour. Cover with lid. Fry about five minutes or so until golden brown and then turn the chicken over to fry the other side. About 10 minutes ~Drain on paper towels.
Note: I use chicken tenders (I buy them in the frozen section) Boneless- skinless chicken breast cut in strips would work as well. What amazed me was the crust when done and no grease when drained on the paper towel. The combination of the beaten egg and the self-rising flour made for the best southern fried chicken I have ever tasted. Mmmmmmm!

Secret seems to be buttermilk and raising in a warm oven covered by a moist towel.
Best Ever Cinnamon Rolls~
Heat oven to 200 degrees and turn oven off.
In small bowl place
- 1/4 C warm water
- add yeast (one package)
- Stir to dissolve.
In large bowl add
- 4 Cups flour
- 1/2 C sugar
- 1 tsp salt
- Mix flour, sugar, salt
- 1 cup warm milk
(add 1 tsp lemon juice to the milk to make buttermilk)
Hint~ buttermilk makes a lighter, softer dough.
- 1/4 cup softened butter
- Add soft butter and yeast mixture to the one cup of warm milk
Directions
- Mix the liquid mixture with the dry ingredients.
- Mix well and knead until smooth.
- Put in a greased bowl and let rise in warmed oven (cover with damp towel ) for about an hour.
- Turn out dough onto lightly floured surface
- Roll out into a rectangle.
- Spread with softened butter and then sprinkle generously with brown sugar and cinnamon sugar.
- Roll up and cut into 14 rolls.
- Place in two greased 9 inch pans and let rise in the warmed oven again.
- Remove raised rolls from oven and heat oven to 400 degrees and then bake for 12 to 14 minutes until very lightly browned
Topping
Add 1/4 softened cup butter and one teaspoon vanilla to about 1 1/2 cups powdered sugar. Add a small amount of milk to make a paste that is thin enough to spread easily. Spread the topping on the rolls while they are still hot. Devour while warm!!
Salted Nut Roll Bars
1 (16oz) jar dry roasted peanuts, divided
4 tablespoons butter
1 (12oz) package Reese’s Peanut Butter Chips
1 can sweetened condensed milk
1 (10) oz bag mini marshmallows
Spread half of the peanuts in a 13×9 inch baking dish. Microwave butter and peanut chips for 2 minutes or until smooth. Stir in condensed milk. Then fold in marshmallows. Spread over nuts in baking dish and sprinkle with remaining nuts and press down. Chill until firm. Cut into bars.
